American Flag Cheese Tray

Meat
  • • 1 Pepperoni meat stick, Large
  • • 1 Bag Pre-sliced pepperoni
Produce
  • • 1 Carton Blueberries
  • • 1 Carton Cherry tomatoes
  • • 1 Carton Raspberries (you could use strawberries)
  • • 3 Red bell peppers
Nuts & Seeds
  • • 1 Bag Almonds
  • • 1 Bag Macadamia nuts (you could use peanuts or cashews)
Dairy
  • • 1 Package Pre-sliced havarti cheese (any cheese that's white)
  • • 1 Pre-sliced mozzarella
  • • 1 Package Pre-sliced white cheddar cheese

you can make so many substitutions to tweak it to your liking.

Simple Strawberry Tea Sandwiches










INGREDIENTS
  

  • 6 slices fresh white bread (or bread of choice)
  • 12-14 ounces strawberry cream cheese (softened to room temperature)
  • 6-8 fresh strawberries








  • INSTRUCTIONS


  • Spread one side of each slice of bread with cream cheese. you can easily use gluten free bread to make this cream cheese. Also see below for other ideas**
  • Slice the strawberries in thin slices and arrange on the cream cheese. For open-faced sandwiches, top all 12 hearts with strawberries. For closed-faced sandwiches, top 6 hearts with strawberries and top with the remaining 6 hearts.
  • Serve immediately. 


NOTES

  1. You can use a cookie cutter, or use a knife to trim the crusts off of the bread.  Slice in half diagonally and in half again to form small triangles.
  2. For the best results, assemble the sandwiches right before serving.  If necessary, the sandwiches can be assembled no more than 1 day ahead of time.  Wrap in parchment and refrigerate in an airtight container.  If the strawberries are juicy, wait to add them until right before serving so the sandwiches don't turn soggy.


**You can variate this recipe by swapping out the strawberry cream cheese for regular cream chees, or add mayo/basil combo...even put cucumber on. That will help you control the sweetness. Have fun with putting your twist on it!

Super Easy Mini Cheesecake Cupcakes

 Layered with a graham cracker crust and creamy tangy cheesecake. Top with salted caramel sauce, chocolate or strawberry sauce.

Ingredients
∙ Makes 12 cupcakes
Produce
  • 1 cup Strawberries
Refrigerated
  • 2 Eggs
Condiments
  • 1 Caramel sauce or strawberry sauce
  • 1/2 tsp Lemon juice
Baking & Spices
  • 2 cups Brown sugar, light
  • 6 2/3 tbsp Granulated sugar
  • 1 Sea salt
  • 3 tsp Vanilla
Snacks
  • 1 cup Graham cracker crumbs
Dairy
  • 4 tbsp Butter, unsalted
  • 16 oz Cream cheese
  • 1 cup Heavy cream
  • 1/2 cup Sour cream
Other
  • 1 stick Plus 4 tablespoons unsalted butter

What I've Been Up To...

I really love cut flowers in the house! My husband and son sometimes bless me by
buying me some (my husband brought me some yesterday as a matter of fact!)
But, I also love to cut them from my yard--one of my fav things to do!
I recently had these lovely pink peonies and sage that I cut and brought in.
Alongside them you see the blessing of a bumper-crop of strawberries!

I held one so you could see how huge they are!

Don't these look pretty in the vase below?

Also, I am still on the Gaps diet...and here is my typical lunch...
salad, fruit, and kefir. It's so nice to have lettuce from the garden,
and the strawberries too--makes life easier!

When we went to visit our friends in Ohio last year, one of them made "Garden Tea" for us to drink.
I have an abundance of mint as you can see below, so I made some...
Basically, I just took filtered water and put it in my Vitamix--then I took washed mint (mine is apple mint)
and put it stems and all in the vitamix and blended it.
I strained it into the pitcher--and drank it.
It is really good!

Here's another batch of strawberries, and some snow peas too.
I really enjoy these fresh garden blessings!

If you read my previous post here, you know that I've been cleaning and decluttering for over a month.
It culminated today with our yardsale (our community had one) and since our son Brad is the president
of our civic assoc., we wanted to participate.
Everything that was left was loaded in the back of Brad's truck and the guys took it
all to Goodwill.

Phil and I also worked hard last night (it was pouring outside-so a great time to do it) cleaning out our attic.
We spent less than 1 1/2 hours, but we got alot done! And, I feel so much better now!
And, we made a little extra money to boot! :)

June is always a busy month for us, and ours is getting cranked up already!

New Rhubarb Recipe

I just made up a new recipe so to speak for using some of our rhubarb
(which my husband loves)

I took my usual Apple Crisp Recipe, and changed it up...

I went out to the garden and cut the rhubarb, and picked some of our strawberries
(I love strawberries!)

I used a jar of the Apple Pie Filling that I had canned

Mixed it together with the sugar

Added the rest of the usual apple crisp ingredients..

Put it in the 9 x 9 baking dish

It came out great--and was a big hit!
I really like using produce from our yard, and items I have canned! :)

Spring Really Is Bustin' Out All Over!

We planted things pretty early this year as it got warm early

Everything is doing well and is pretty established

We put a flag out that we snagged at a yard sale last year :)

These look purple, but they aren't they're BLUE



These tiny white flowers pictured above are actually growing on my moss!
It was taken really, really close up



My herbs in the pot are really thriving, tomato plant too!
(Cherry tomato)

Our blackberry plant has lots of blooms!

Our cranberry did too--the flowers are almost gone though
I waited too long to take a pic!

Cukes are getting some mature leaves

Brad's lettuce is so lush and green

Strawberries are being picked already

and chamomile below are both blooming





I've had a hard time getting these squash plants going :/

This watermelon plant has speckled leaves, and the watermelon will
be speckled too...it's called Moon and Stars


Think I'll get any peaches off my new tree?




We planted these table grapes last year...can't wait to see what they're going to do!
The guys have to build me a trellis yet...
