Farmers' Country Breakfast Casserole
Ingredients:

- 24 ounces frozen hash brown potatoes
- 8 eggs, beaten
- 1 cup milk
- 1 1/2 cups ham, cut up into 1 inch pieces (I also use cooked breakfast sausage, or cooked bacon) (you can use one or more)
- 8 ounces shredded cheddar cheese
- 1/2 cup onion, chopped
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Directions:
- In a 9 x 13 greased baking pan, layer potatoes, ham, onion and cheese.
- In a medium bowl, beat eggs; add milk, salt and pepper to eggs; beat well until thoroughly incorporated.
- Pour over potato/ham layers.
- Cover and refrigerate overnight.
- To prepare: Preheat oven to 350 degrees; remove cover and bake for approximately 60 minutes. (mine always takes longer! about 1 hr 15 min)
