Are you hungry NOW?

Wondering what I've been up to this morning? Well....I made
Soft Ginger-Molasses Cookies

Mix well: 2 c. brown sugar 2 eggs 1/2 c. molasses 1/4 c. softened butter 1/2 c. oil

Add and beat with heavy mixer: 4 tsp. baking soda 2 tsp. cinnamon 2 tsp. ground ginger 1/2 tsp. salt 4 1/2 c. flour
Shape dough into walnut-size balls. Roll in granulated sugar. Place on greased cookie sheets.

Bake about 7-8 minutes at 350 degrees. Makes about 60 medium-sized cookies. A great gingerbread-tasting cookie without having to roll them out!

The picture above is what they look like just baked the way you rolled them.

(they don't spread much--you can put them closer together than my picture on the cookie sheet showed)

Above, we tried flattening some with the bottom of a measuring cup to see what they would look like, these are already baked.

Can you guess what these two are waiting for? Hmmmm.....I wonder!?

Don't worry, Chips made out like a bandit! One of the cookies rolled off the sheet when we picked up the tray to put it in the oven, Chips was happy to clean up the mess! :)
