Taco Bake Recipe


 
 
 
Taco Bake

Ingredients:
1 pound ground beef
1 packet taco seasoning
* water as called for on back of seasoning packet
3 large flour tortillas (8-inch size)
... 1/2 cup Salsa Con Queso
1 1/2-2 cups shredded Mexican cheese blend

Directions:
Brown and crumble ground beef. Drain excess grease.
Add in taco seasoning and water (following directions on back of seasoning packet).
Once the taco meat is ready, turn off heat and add in 1/2 cup salsa con queso.
Give it a good stir until thoroughly combined.
Preheat oven to 350F degrees.Spray an 8-inch round baking pan with nonstick cooking spray.
Layer the bottom of the pan with a flour tortilla.
Now add about 1/3 of the ground beef taco filling on the the first layer.
Then add 1/3 of the shredded cheese.
Continue until you are done with all the layers: another tortilla, more taco mixture, more cheese.
Bake at 350F degrees for about 15-20 minutes.Until cheese is melted and edges are slightly golden brown.
Allow to cool for a couple of minutes.
Then slice and serve.
Serve with some sour cream and diced tomatoes on top.
 
*You could easily tweek this to make it healthy by using your own "homegrown" salsa and tomatoes--and mixing your own taco seasoning  :)
 
This sounds like a fun "Family Night" meal doesn't it!?

Friday Night Fun!

Well, our night didn't end with our free Rita's water ice...we went to Mommom's house for dinner and game night too! Her delightful daffodils greeted us at the walk way. :) They're mini's!

And then, her sweet little Easter Egg wreath welcomed us at the door. (cute!)


After the delicious meal (and I do mean delicious!) we started our game night! We started out with SkipBo


Then we got serious with "Pass The Pigs"!


That's right--you heard me--PIGS! You roll them instead of dice.


And, you get points according to the positions that they land in! Simple.

The first one to score 100 points wins!

I mean, are we crazy or what?

But, it sure was fun!

Reviving an old tradition...

This past Friday I pulled some frozen pizza dough out and made some pizza. We used to do this every Friday night, but, I haven't done it for awhile...
But it was good!
Friday night in our home is Family Night. This is a long established tradition, and still very ingrained in our now grown kids!
When they were young, we did everything from obstacle courses, to setting up the pop up tent inside and doing an inside camp out! (complete w/smores) and a story of course.
Now, we do a movie night, or a game night. Maybe we'll spend time in the pool in the summer, or outside in the gazebo playing games or talking--or, maybe enjoying homemade ice cream.
The important thing about it, was time set aside to be together, without distractions...
to this day it's a much loved time in our home!
