Cranberry Salad

Cranberry Salad



INGREDIENTS
1(12-ounce) bag fresh cranberries
1large Granny Smith or other tart green apple
1large orange
1large Honey Crisp or other red apple
1cup chopped pecans or walnuts
1large (6-ounce) box raspberry jello
2cups water
1cup sugar

Directions
  1. Zest the orange, peel, and liquefy in the food processor.
  2. Chop all the other fruit in the food processor, and add to large bowl with orange and zest. Add nuts.
  3. Bring water and sugar to a boil until sugar dissolves completely. Remove from heat, let cool just a bit, and whisk in jello.The jello helps things hold together. You could use unflavored gelatin and additional sugar if you wish.
  4. Pour jello over fruit, give a good stir, and refrigerate overnight

Ingredients

Mashed Sweet Potatoes:

  • 3 to 3- 1/4 pounds sweet potatoes* peeled and chopped into large chunks, see note
  • 2 tablespoons unsalted butter
  • 1/4 cup milk or half and half
  • 1/2 teaspoon ground cinnamon or pumpkin pie spice
  • 2 tablespoons brown sugar
  • salt to taste

Topping;

  • 4 tablespoons unsalted butter softened
  • 1/4 cup brown sugar
  • 1/4 cup all purpose flour for a sturdier streusel add and additional heaping tablespoon of flour
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1/2 cup chopped pecans
  • 2 -3 cups mini marshmallows or more, if you'd like

Instructions

Mashed Sweet Potatoes:

  • Preheat oven to 375°F. Grease a 2 or 2 1/2 quart casserole dish (preferably a rectangle or oval so there's a decent surface area for the topping; I use an 8x11) and set aside.
  • Place the sweet potatoes in a large pot, cover with water, and boil until tender (about 7 minutes, depending on the size). Drain really well and return to the pot. Add butter, milk, cinnamon, brown sugar and salt to the potatoes and mash until smooth. Use a hand mixer, if desired, to make them extra smooth. Taste the potatoes and add additional seasonings, if desired.
  • Transfer the mashed potatoes to the prepared casserole dish. Place in the oven until heated through (if they're already warm it will only take a few minutes). While the sweet potatoes are heating, prepare the topping.

Topping:

  • In a medium bowl, combine butter, brown sugar, flour, cinnamon and salt (I use a fork or rubber spatula to stir and mash the mixture), then mix in pecans.
  • Remove the sweet potatoes from the oven. Top with half the marshmallows, then sprinkle half the streusel over the marshmallows (pinching pieces together with your fingers). Top with the other half of the marshmallows and sprinkle the remaining streusel over the top. Place back into the oven for 8-15 minutes, until the topping is bubbly and golden brown (keep an eye on it so the marshmallows don't burn). You can also place it under the broiler very briefly to add a little more color to the marshmallows. Note: the longer it is in the oven the more likely that the marshmallows will begin to melt. Allow to sit at room temperature for several minutes before serving.

Notes

MAKE AHEAD TIPS:
  • You can assemble the cooked and seasoned mashed sweet potatoes in a casserole dish and refrigerate tightly covered for 2 days (without any topping).
  •  You can also prepare the streusel topping (without the marshmallows) and refrigerate that separately.
  • Before serving, bring the streusel topping to room temperature. Heat the potatoes (without any topping) in the oven until heated all the way through (30-ish minutes depending on the size of your casserole dish. Or speed it along by microwaving). Once the potatoes are warmed through, sprinkle on the marshmallows and streusel and return to the oven for 8-15 minutes, until the marshmallows are lightly toasted (broil briefly for a darker color).

*Some grocery stores might have these potatoes labeled as YAMS. Make sure you purchase sweet potatoes/yams with orange flesh and pinkish brown skin. Scrape the skin a little to see the color of the flesh, if necessary.

  •  1 box Jiffy Corn Muffin Mix
  •  1 can Creamed Corn
  •  2 cans Whole Kernel Corn (drained)
  •  1 cup Sour Cream
  •  1/2 cup Butter (Melted)

INSTRUCTIONS

  1. In a large bowl, stir together the 3 cans of corn, corn muffin mix, sour cream and melted butter.
  2. Pour into a greased pan.
  3. Bake for 45 minutes or until golden brown in a 350 degree oven.
  4. Remove from oven, sprinkle with grated cheese. Return to oven for 10 minutes.

Cheesy Broccoli Casserole-makes a great Thanksgiving Side Dish!

Instructions

  1. Preheat oven to 350*F
  2. Place broccoli in a steaming basket on stove and steam for 5 minutes or until broccoli is tender to a fork.
  3. Remove broccoli from stove and chop into bite sized pieces. Place into a medium size mixing bowl.
  4. Add to broccoli, soup, mayonnaise, butter, eggs, onion, salt and pepper. Mix well.
  5. Add 3/4 cup of cheese to broccoli mixture and mix well.
  6. Pour entire contents into an 8x8" square baking dish.
  7. Top with remaining 3/4 cup of cheese and Ritz crackers.
  8. Bake for 30 minutes or until cheese is melted and top is golden.

Rice Krispie Treat Pumpkins Perfect for Thanksgiving, or for kid's school fall parties!

Ingredients
  • ¼ cup butter
  • 1 bag large marshmallows (approximately 40 marshmallows)
  • 6 cups Rice Krispies
  • Red & Yellow Liquid Food Coloring
  • Mini Rolos
  • Green M&M's
  • ¼ cup cooking oil or melted butter in a small bowl (to keep it from sticking to your hands)  (Or use gloves, see NOTE below)
Instructions
  1. In a large pot, melt the butter over low heat.
  2. Add the marshmallows and stir until completely melted and combined with the butter.
  3. Remove from the heat. Add several drops of yellow food coloring, mix it together, then add red food coloring one drop at a time, mixing as you go. Add red/yellow drops until you reach your desired color. (I used about 4 drops red and 12 drops yellow). Mix well.
  4. Add the Rice Krispies and stir to combine.
  5. Coat both sides of your hands with a generous amount of cooking oil or butter, and roll the Rice Krispie mixture into small balls. Set on parchment paper. Add oil/butter to your hands after each ball.
  6. While the balls are still warm, gently press a Mini Rolo into the top of each pumpkin for the stem and add a green M&M beside it as the leaf. (Tip: If the pumpkins cool before you're finished, use the end of a thick marker or apple corer to make a small indent in the top for the chocolate to sit in.)
  7. Allow to cool until firm.
Notes
You may want to use food handling gloves to keep the mixture from sticking to your hands! 

These rice krispie treat pumpkins are ADORABLE and they're really easy to make! They'd be perfect for a Halloween party snack, or even Thanksgiving!
