Sarah asked me for the Watermelon Ice Cream Recipe
(it actually says sherbet, but it didn't taste like sherbet!)
Watermelon Sherbet
serves 4 cups
4 c. diced seeded watermelon
1 c. sugar
3 Tbsp Lemon Juice
Dash of Salt
1/4 Cup Cold Water
2 1/2 tsp (or one envelope) of unflavored gelatin
1 Cup Whipping Cream
- Combine first 4 ingredients in a large bowl cover and chill 30 minutes.
- Process watermelon mixture in a blender until smooth. Return to bowl
- Sprinkle gelatin over cold water in a saucepan; let stand 1 minute
- Cook over low heat, stirring until gelatin dissolves (about 2 min.)
- Add to watermelon mixture, stirring well.
- Add whipping Cream; beat at medium speed with mixer until fluffy
- Freeze in Container (1 gallon) ice cream maker (Does not need ripening)

Thanks! That looks really good. Watermelon season is past in TN, so we'll have to wait 'til next year to try it, though.
