KETO CRACK CHICKEN IN THE CROCK POT
Ingredients
  • 1/2 cup chicken broth
  • 1 Hidden Valley Ranch seasoning packet
  • 2 pounds of defrosted chicken breasts
  • 8 oz package of Philadelphia Cream Cheese cut into chunks
  • 8 slices cooked and crumbled bacon
  • 1/2 cup shredded cheddar cheese
Instructions
  1. Add chicken broth to the slow cooker and stir in Hidden Valley Ranch seasoning packet. Then add defrosted chicken breasts.
  2. Cover and cook for 4 hours on high or 8 hours on low.
  3. After the cook time has ended, shred the chicken with two forks.
  4. Add chunks of cut up Philadelphia Cream Cheese, bacon and shredded cheddar. Stir ingredients.
  5. Cover the crock pot again, and cook for an additional 5-10 minutes, until the cream cheese has melted.

  •  3 large tomatoes  sliced

Here's what you will need:

* 1 package pre-made cookie dough *optional* extra for topping
* 3 8-oz packages of cream cheese, softened
* 1 cup granulated sugar
* 1 cup sour cream
* 1/2 tsp vanilla extract
* 3 eggs

Directions:

Preheat oven to 350°F/180°C. Press a package of pre-made cookie dough into a springform pan. In a bowl, mix the cream cheese and sugar until fluffy. Add sour cream and vanilla and mix. Add the eggs, one at a time, mixing thoroughly after each one. Pour into springform pan. *Optional* drop half teaspoonfuls of cookie dough on top of the cheesecake batter. Bake for one hour, cool completely, then refrigerate overnight.

Ingredients
  • 2 cups (500 ml) all-purpose flour, plus more for dusting
  • ¼ cup (60 ml) granulated sugar
  • 1 tbsp (15 ml) baking powder
  • 1 tsp (5 ml) salt
  • 6 tbsp (90 ml) cold unsalted butter
  • 2 large eggs
  • ½ cup (125 ml) 35% whipping cream
  • 1 cup (250 ml) fresh blueberries, washed and dried
  • zest from one large lemon


Instructions
  1. Preheat oven to 400°F (200°C). Line baking sheet with parchment paper.
  2. To a large bowl, add flour, sugar, baking powder, salt, lemon zest and butter. Using your fingers or a pastry cutter, gently work together until the mixture resembles coarse crumbs.
  3. In another bowl, crack in eggs, using a fork break up the egg and beat together. Add cream and continue beating with the fork until completely combined.
  4. Add the egg and cream mix to the flour mixture and stir gently until all the flour has been incorporated. (Don’t over mix or your scones will be tough)
  5. Add blueberries and VERY GENTLY (try not to break the berries) mix to combine
  6. Scrape mixture onto floured work surface.
  7. Shape into a ball and place on lightly flowered parchment lined sheet pan.
  8. Using palm of your hand, flatten ball into a disc shape – 1-3/4 inch (4.5 cm) thick.
  9. Cut disc in half and then each half into three triangular pieces.
  10. Optional - Sprinkle scones with crystallized sanding sugar.
  11. Place in fridge for 15 minutes to firm up the butter. (This will result in a more tender scone)
  12. Transfer to preheated oven and bake for 18-22 minutes (or until golden).
  13. Recut scones on previous markings and cool slightly before serving.

EASY ORANGE CHICKEN

Because of how easy and tasty this chicken is, it’s one of my favorite meals to make for the family. My kids absolutely LOVE it! I usually start this dish just after school so that it’s ready just in time for dinner. I serve it with brown rice and veggies to complete the meal.

INGREDIENTS:
  • 4 chicken breasts
  • 3/4 cup BBQ sauce
  • 3/4 cup sweet orange marmalade
  • 2 tbsp soy sauce
  • green onion & sesame seeds for garnish (optional)
INSTRUCTIONS:
  1. Cut 3-4 thawed chicken breasts into bite sized chunks and cook them in your slow cooker on MEDIUM for about 1 1/2 hours (for best results stir half way through). There is no need to add anything. The chicken cooks well in its own juices. If your slower cooker doesn’t have a medium setting, let the chicken cook for 2-3 hours on LOW.
  2. While the chicken is cooking, mix together 3/4 cup BBQ sauce, 3/4 cup orange marmalade, and 2 tbsp of soy sauce until well blended.
  3. After 1 1/2 hours, drain the chicken juices from your crockpot and pour your mixture in the crockpot with your chicken. Be sure that the chicken is well coated and mixed in with the sauce. Cook on MEDIUM for an additional 2 hours (you may need to add more time if the chicken is not done). The sauce may appear a bit runny at first but it thickens quite a bit as it cools. Again, if you don’t have a medium setting, add an additional hour on LOW.
  4. This chicken is wonderful served with rice. I also like to top it with sesame seeds, and usually cook broccoli and carrots to serve on the side.
TIPS:
  • Add red pepper flakes and/or Sriracha sauce to the mixture to turn up the heat.
  • Add chopped onion and bell peppers to the crockpot when you add the mixture for added flavor.
  • You can also cook the chicken on LOW, just add more time. Just be sure that the chicken juices are drained before adding the mixture or it will be watery.
  • Every slow cooker varies. These are the heat settings and times that work best for me.

Salted Caramel Brownies

Fudgy brownies studded with chocolate chips and topped with caramel and a sprinkling of sea salt.

INGREDIENTS:

1 cup butter
4 ounces semi-sweet chocolate
2 cups sugar
4 eggs
1 1/2 cups flour
1/3 cup cocoa powder
1/2 tsp salt
1/2 cup semi-sweet chocolate chips
approximately 10 ounces caramel sauce
coarse sea salt

DIRECTIONS:


Preheat to 350ºF. Lightly grease a 9x9 baking dish.
Melt together the butter and the semi sweet chocolate. Let cool slightly.
Stir in the sugar and the eggs. Mix in the flour, cocoa powder, and salt. Fold in the chocolate chips.
Spread the batter in the prepared baking dish. Bake for 30-35 minutes until a toothpick inserted comes out mostly clean.
Let cool completely before topping with caramel sauce and sprinkling with sea salt.

Ingredients

Brown Sugar/Cinnamon Mixture:

  • 1/3 cup light brown sugar
  • 1 teaspoon ground cinnamon

Bread Loaf

  • 1/2 cup butter softened
  • 2/3 cup granulated sugar
  • 2 eggs room temp
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk or almond milk room temp

Chopped Apple Mixture

  • 2 large apples any kind, peeled and chopped small, but not fine. Then toss apples with 2 tablespoons granulated sugar and 1 teaspoon cinnamon just before adding it to the bread mixture.

Old-Fashioned Creme Glaze

  • 1/2 cup of powdered sugar
  • 1-3 tablespoons of milk or cream- depending on thickness of glaze wanted. For more apple fritter style like the apple fritter donut- use more milk for a thinner glaze that you can pour over the whole loaf.

Instructions

  • Preheat oven to 350 degrees. Use a 9x5-inch loaf pan and spray with non-stick spray or line with foil and spray with non-stick spray to get out easily for slicing.
  • Mix 1/3 cup brown sugar and 1 teaspoon cinnamon together in a bowl. Set aside.
  • Combine & whisk 1 & 1/2 cups flour and 1 & 3/4 teaspoons baking powder together in another bowl and set aside.
  • In another medium-sized bowl, beat 2/3 cup granulated sugar and 1/2 cup softened butter together using an electric mixer until smooth and creamy.
  • Beat in 2 eggs, one at a time until blended in; add in 1 & 1/2 teaspoons vanilla extract and mix in.
  • Add the flour mixture into creamed butter mixture and mix until blended.
  • Mix 1/2 cup milk into batter and continue mixing until smooth.
  • Pour half the batter into the prepared loaf pan; add half the chopped apple mixture with the sugar and cinnamon added in.
  • Sprinkle 1/2 of the brown sugar/cinnamon mixture you set aside earlier, on top of apple layer. 
  • Pour the remaining batter over apple layer and top with remaining chopped apples, then the remaining brown sugar/cinnamon mixture.
  • Lightly pat apples into batter; swirl brown sugar mixture through apples using knife or spoon.
  • Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, approximately 60 minutes.
  • To make glaze, mix 1/2 cup powdered sugar and 1 to 3 tablespoons milk or cream together until well mixed.  (Place mixture in microwave for 10 seconds to get it pourable if it needs a boost.)
  • Let loaf rest in pan for about 15 minutes before removing from pan to let cool off completely on a cooling rack. Drizzle with glaze.
  • If you want more glaze, make a double batch. 🙂

Notes

Optional:Next time I think I would add in walnuts. You can always use other fruit, or you could add in chocolate chips too! (Of course!)
Depending on thickness of glaze wanted, you can go for thick or thin. For a more apple fritter style like the apple fritter donut, use 3 tablespoons milk for a thinner glaze that you can pour and drench over the whole loaf and then make another batch again, using 1 tablespoon milk and then drizzle on top of the first glaze.  
Substitutions:
I've also substituted this with 1/2 cup Greek Yogurt, 1/3 cup milk of choice and add 1/4 teaspoon baking soda instead of 1/2 cup milk as called out in the bread loaf ingredients.
Vegan: Use flax eggs, earth balance and almond milk. 
Baking options:
Bake 30-40 min. for 2 loaf recipe (2 8x4 pans)
15-20 minutes for muffins 
50 -60 minutes for one full loaf recipe (9x5 pan)

Ingredients 
1 pound unsalted butter
1 3/4 cups granulated sugar
2 1/4 cups packed light-brown sugar
4 large eggs
3 cups plus 2 tablespoons pastry flour
3 cups bread flour
1 tablespoon salt
2 teaspoons baking powder
2 teaspoons baking soda
1 tablespoon pure vanilla extract
2 pounds bittersweet chocolate, coarsely chopped

Directions
- Preheat oven to 350 degrees. Line baking sheets with parchment paper or nonstick baking mats; set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and sugars.
- Add eggs, one at a time, mixing well after each addition.
- Reduce speed to low and add both flours, baking powder, baking soda, vanilla, and chocolate; mix until well combined.
- Using a 4-ounce scoop for larger cookies or a 1-ounce scoop for smaller cookies, scoop cookie dough onto prepared baking sheets, about 2 inches apart.
- Bake until lightly browned, but still soft, about 20 minutes for larger cookies and about 15 minutes for smaller cookies.

According to Pinterest, This Is the Most Pinned Burger of ALL TIME!

Burger Ingredients:
2 lbs ground beef 85/15
sesame seed buns
1/2 cup of grated Monterrey jack cheese
1/4 cup BBQ sauce
season salt to taste
cracked black pepper
onion powder
We usually like to buy extra lean ground beef around these parts, but when it comes to a juicy burger, you’ve gotta make an exception.  The best burgers have more fat–naturally.


Combine the ground beef, grated cheese, bbq sauce, and seasonings.  Shape patties that are about 1 inch thick.  Then it is very important to  push a 1/2 inch indent into the center of the patty–this is what prevents the patty from becoming a dome.  These burgers stay extra moist because the bbq sauce and cheese are mixed in with the meat.


I cook the patties on this really cool skillet that has grill lines.  I wait for the skillet to get super hot and then I apply a very thin layer of butter to the grill lines.  Place the patties on indent side up as pictured.

Reduce heat to medium and allow this side of the patty to cook for about 4-6 minutes, but make sure it doesn’t burn. Then flip the burger over and cook until done.  I like my burger medium-well.  While the burger is cooking, I like to whip up some secret sauce–sort of my version of In & Out’s addicting sauce.

Ingredients:
3/4 cup of mayo
1/4 cup ketchup
1/4 cup relish
2 tablespoons worcestershire
seasoned salt
Combine all ingredients and whisk until well mixed. Taste and adjust ingredients to your liking.
I also butter and toast the buns on a skillet Pioneer Woman style.  Something about a sesame seed bun makes the burger seem more legit.
Now while the burger might not look like an award winner, it certainly tastes like it.

 1. I don’t ever put this type of burger on the grill because it is too moist and will fall through the grates–which is why I use a grill pan.  2. I wait to flip the burger until one side is very thoroughly cooked, so that it holds together better before flipping.  3. If you are worried about them falling apart still, perhaps use less BBQ sauce than what I have listed in the recipe (try 2 tablespoons instead).  4. Some commenters have suggested adding some bread crumbs.
