Best Ever Strawberry Spinach Salad

INGREDIENTS
Candied Pecans
- 1 tablespoons butter
- 1 tablespoons packed light brown sugar
- 1/2 cup pecan halves
- pinch salt
Dressing
- 2 tablespoons granulated sugar
- 1/4 cup extra light tasting olive oil
- 1/4 cup white wine vinegar
- 1 tablespoon Dijon mustard
- 2 garlic cloves, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon paprika
Salad
- 10 ounces fresh baby spinach - rinsed, dried and torn into bite-size pieces
- 1/4 small red onion, sliced
- 1 quart fresh strawberries, hulled and quartered
- 1/2 cup fresh blueberries
- 1/2 avocado, cut into bite-sized pieces
- 1/2 (5 ounce) package blue cheese crumbles
INSTRUCTIONS
- Place a silpat mat or a sheet of parchment paper on the counter top to dry the pecans.
- In a small skillet over medium heat melt butter. Add pecans, sugar and salt. Stir until pecans are well coated. Stir until the sugar caramelizes, about 3-5 minutes.
- Spread onto silpat or parchment paper. Separate pecans. Allow to cool.
- Meanwhile: in a pint size mason jar combine dressing ingredients. Seal and shake until well combined. Set aside on the counter.
- In a large bowl combine the spinach, onions, strawberries and blueberries. Pour about 1/2 of dressing over salad, and toss. Top with avocado, cheese and candied nuts. Serve remaining dressing on the side.
- Refrigerate for 15 minutes before serving (or serve immediately).
- Serve with the remaining dressing on the side. Enjoy!
DONNA'S NOTES:
- I love to snack on the candied pecans and they are great on ice cream so I double the candied pecan recipe and save 1/2 for later. The recipe as written will allow about 5 candied pecans per serving.
- The dressing may solidify in the refrigerator. It is best to allow dressing to sit on the counter. Shake well before using.
- If you are making the salad ahead. Prep the salad ingredients and refrigerate. Then dress the salad about 15 minutes before serving. This will help keep the spinach from wilting.
- Mozzarella, feta or goat cheese are also amazing on this salad.
- Lighten it up by subbing plain pecans for the candied ones and eliminate the sugar from the dressing.
- Add sliced grilled chicken for a fabulous summer meal.

Healthy Cucumber Lemonade
This Healthy Cucumber Lemonade is the perfect naturally-sweetened summer drink made from blended cucumbers, fresh lemon juice and honey!

Ingredients
- 1 large cucumber (cut into chunks)
- 2 cups water
- 1/2 cup liquid honey
- juice of 7 lemons
- 3-4 cups sparkling water (or still water)
Instructions
- Add the cucumber chunks, water, honey and lemon juice to your blender and blend on high speed until very smooth.
- Pour the cucumber mixture into a large pitcher through a strainer to catch any pulp that remains.
- Add the sparkling water to the pitcher, along with some lemon and cucumber slices (and ice, if desired) and stir gently to combine.
- Pour into sugar-rimmed glasses (if desired) with a few slices of lemon and cucumber, and enjoy with cute paper straws!

No Bake Summer Berry Lasagna is EASY SUMMER DESSERT RECIPE for refreshing sweet treat. This is perfect idea for Memorial Day and 4th of July dessert.
Ingredients
For Whipped Cream:
- 1 and 2/3 cup heavy cream-chilled
- about 1/3 cup powdered sugar (to taste)
- 1 teaspoon vanilla
Red Velvet Crust:
- 3 cups graham cracker crumbs
- ¼ cup strawberry jam
- ½ cup+ 2 tablespoons unsalted butter-melted
- Red gel food coloring
For Cheesecake Layer:
- ½ cup unsalted butter-softened
- 8 oz. cream cheese-softened
- 1 cup powdered sugar
- 1 teaspoon vanilla
- 2/3 cup diced fresh strawberries
- 1 cup of whipped cream
For Blueberry Jello Salad Layer:
- 2 (3 oz.pckg) berry blue Jello (or other flavor to your taste)
- 1 and 1/4 cup boiling water
- 2 cups blueberry pie filling
- 1 cup of canned crushed pineapple-drained from juice (if use pineapple chunks, pulse it in a food processor to get fine crushed pieces)
Topping:
- 2 ½ cups whipped cream
- Fresh strawberries halved
- Fresh blueberries
- ¼ cup chocolate chips
Instructions
To make the crust:
- Combine graham cracker crumbs, strawberry jam, melted butter and red food coloring( drop the color directly in melted butter or jam, it will dissolve better).
- Mix until evenly moistened. Press the mixture in the bottom of 13 x 9 x 2 inch dish. Place the crust in the freezer to firm.
Filling:
- First, make the whipped cream. In a bowl beat chilled heavy cream until soft peaks form. Add powdered sugar and vanilla and continue mixing until really STIFF peaks form. Measure out 1 cup of beaten whipped cream for cheesecake layer. Cover remaining whipped cream and reserve for topping.
- To make cheesecake layer cream together softened cream cheese, powdered sugar, vanilla and softened butter. Mix in 1 cup of whipped cream(do not use soft whipped cream, cheesecake filling have to be thick or it won’t hold dense blueberry jello salad layer on top)
- Gently fold in diced strawberries and spread over the crust. Place in the fridge to set.
- To make the blueberry jello salad layer in a large bowl place 6 oz. berry blue Jello gelatin mixture. Pour 1 ¼ cup boiling water and stir for a few minutes until the gelatin dissolved completely. Set aside to cool for 15-20 minutes, then stir in crushed pineapple and blueberry pie filling. Wait until it’s cooled to room temperature and soft set, or place in the fridge to speed the process but stir from time to time.
- Spread blueberry jello layer over chilled cheesecake layer. Do not pour warm blueberry jello over cheesecake layer, it will melt it.
- Place in the fridge to chill until jello layer is set completely .
- Top with remaining whipped cream. Before serving arrange fresh berries on top. Melt white chocolate chips, transfer melted chocolate to a ziplock bag, cut off the corner and drizzle over the top of lasagna.
- Store in the fridge.
